Chill a Champagne glass.
Put all ingredients in a shaker except the espuma and shake.
Strain the drink in the chilled glass without ice.
Now gently put the espuma on the drink.
Decorate with a mint leave.
5cl nginous! Swiss Blended Gin
2.5cl lime juice
2cl home made Ricola Syrup
300ml frehs lime juice, 200ml simple syrup, 100ml egg white, 10 mint leaves.
Put all ingredients in a bag and place it in the freezer for 3-4 hours. Then fill them in a siphon. Use 2 iSi capsules and put it in the fridge.
100g Ricola Bonbons (original!), 250ml orange juice, 125ml water, 125ml sugar.
Cook and stir until everything is dissolved.
